Gluten-free Caserecce alla Norma, with green plantain flour from Platatine’s Mnemosine line, is the world’s first gluten-free certified plantain pasta.
➡Caserecce are a type of fusilli and are native to Sicily, but also characteristic of other Central-Southern regions.
Strips of pasta rolled onto themselves to form scroll-like shapes.
➡It is a variant of the busiata (Sicilian pasta) or the busa (Sardinian pasta), both produced in islands influenced by the Arabs.
In fact, the “bus” in Arabic refers to the reed on which the pasta was wrapped to prepare it.
➡This pasta shape is also known as “casarecce,” although the etymologically correct form, according to the Accademia della Crusca, is “caserecce,” meaning “homemade,” “genuine.”
▶The recipe for Pasta alla Norma, with eggplants, is attributed to the city of Catania, so much so that it is the symbolic dish of Catanese cuisine, and it seems to be an explicit reference to Vincenzo Bellini’s opera of the same name.
A “National Pasta alla Norma Day” is also celebrated on 9/23.
▶According to some, the name was given by the Sicilian playwright Nino Martoglio, who exclaimed “It’s a Norma!” to indicate its exquisite taste, comparing it to the famous opera.
