Gyeran-jjim (Korea)

Gyeran-jjim or Dalgyal-jjim (달걀찜) or steamed eggs is a type of jjim, Korean steamed dish.

▶️It is a banchan (side dish) and is often seasoned with saeu-jeot (salted shrimp) or myeongnan-jeot (pollock roe, Alaska pollock roe), spring onion and toasted sesame seeds, gochutgaru (chili flakes) or sil-gochu (crushed dried red chili).

▶️There are different ways to cook it: it can be steamed, simmered in a clay pot over very low heat, and even microwaved.

▶️The eggs are strained and beaten with water or dashi and/or anchovy broth for a richer flavor, until the mixture is completely blended and has a creamy consistency.

▶️Optional ingredients include mushrooms, peas, onions, Korean zucchini, carrots, and other vegetables.

▶️Traditionally, the dish is steamed in ttukbaegi, earthenware pots often used for various Korean dishes, but modern techniques also employ small ramekins placed in large pots or even microwaved.

Ingredients

  • 4 eggs
  • 1 cup dashi broth (or anchovy broth or water)
  • 1.5 tablespoons dried shrimp
  • 1 spring onion
  • to taste salt
  • to taste sesame oil

Steps

  • Beat the eggs.

    In a ttukbaegi or in one (or more) earthenware containers greased with warm sesame oil, over medium heat, pour the broth, or water, salt, and dried shrimp, then add the eggs.

    Stir.

    Cover, lower the heat, cook for 2/3 minutes.

    Garnish as desired with pollock roe, dried shrimp, chopped spring onion, chili flakes and/or sesame seeds.

    Serve immediately.
