Huevos Rotos with Serrano Ham

The first recipe of the column Blog Spanish Version, after returning from the trip to Gran Canaria, is a dish tasted at the restaurant “La Marea” in Las Palmas: huevos rotos with Serrano ham.

It is a kind of scrambled egg with potatoes and the addition of cured ham, in this case “Serrano”, which you can also find in the recipe for the famous Bocadillo jamon Serrano.

We also tasted it at the restaurant “El Poncho” in a skillet version, that is, instead of being presented in layers, it was brought to us directly from the pan – see photo below –

A very tasty dish that we also ate in its version with chistorras, which are typical Spanish sausages.

Huevos rotos with ham

Ingredients for Huevos Rotos with Ham:

  • 2 medium potatoes
  • 2 eggs
  • 2 slices Serrano ham (cured ham)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste parsley

Preparation

  • Peel and cut the potatoes into very thin slices, rinse them, dry them well, and fry them in a pan where the oil is very hot.

    Drain them and dry the excess oil with absorbent paper.

    Cut the cured ham into strips and add it to the potatoes.

    In the same pan where we fried the potatoes, scramble one egg (adjust salt) and fry the other.

    Add the scrambled egg to the potatoes and ham.

    With the help of a pastry cutter, compose the dish with the mix of potatoes, ham, and eggs, and finally garnish with the fried egg.

    Serve with parsley and potato chips as desired.
