Jitterbuggare, or mini-jitterbuggare, is a Swedish spiral-shaped cookie made with shortcrust pastry and meringue.


Made with a shortcrust pastry of flour, sugar, butter, and eggs or egg yolks and a layer of meringue made from egg whites and sugar.

The dough is rolled up, then sliced and baked in the oven.


The Jitterbuggare is a popular coffee treat in Sweden since the 1940s as fika or kafferep, meaning a coffee club or coffee party, a social gathering where, among other things, coffee is consumed.
It is also possible to serve foods, called coffee foods, like various types of pastries.


Jitterbugs” was the title of a 1943 Laurel and Hardy film.

The jitterbug dance was also popular at that time and is thought to be related to the origin of the name.

Ingredients

  • 1.6 cups flour
  • 3/4 cups sugar
  • 7 tbsps butter
  • 1 egg

Steps

  • Mix the flour with 1/4 cup of sugar, crumbled butter, and egg yolk.

    Knead the dough and place in the refrigerator for 1 hour.

    Whip the egg white with 1/2 cup of sugar to make the meringue.

    Roll out the dough to 20×12 inches and spread the meringue on top. With the help of parchment paper, roll it up.

    Place in the freezer for 30 minutes.

    Slice and bake in the oven at 300°F for 20 minutes.
