The Khaman Dhokla is an Indian snack made with besan (chickpea flour) and spices.
Traditionally, Khaman and Dhokla are two distinct dishes, both steamed, from Gujarati cuisine.
The Khaman is made with ground channa daal or channa flour (besan), soaked in water to form a thick, cake batter-like consistency, usually with lemon juice, semolina, and a leavening agent like eno fruit salt or baking soda.
A final touch of tadka is added using curry leaves, hing (asafoetida), and chilies.
In many regions, Khaman is called Khaman Dhokla.
But the Dhokla is made from a fermented batter of rice and split chickpeas and is pale yellow or white. It is typically served with curd or dhania chutney.

Ingredients
- 4.4 oz chickpea flour – besan
- 0.35 oz semolina
- to taste ginger
- to taste chili
- 2 tsps sugar
- to taste turmeric powder
- 1 tsp fruit salt (or baking soda)
- 1 tbsp lemon juice
- to taste salt
- to taste vegetable oil
- 5 curry leaves
- to taste mustard seeds
- to taste asafoetida

Steps
Flavor 1/2 cup of water with ginger, chili, salt, 1 teaspoon of sugar, oil, and lemon juice.
Mix the chickpea flour with turmeric and add the semolina. Finally, add the flavored water and the baking soda mixed with 1 tablespoon of water.
Steam in a greased 8×8 baking pan for 20 minutes.
Let cool and cut into squares.
In a pan, fry the mustard seeds in oil, add curry leaves, chili, asafoetida, 1 teaspoon of sugar, salt, and 1/2 cup of water.
Let cool and pour over the cake, little by little.
Serve with sesame and fresh coriander.
