Krumplis Lángos Hungarian Fried Bread

▶▶Lángos nowadays is a fried flatbread, Hungarian, but in the past, it was made with the last pieces of bread dough and baked in the front part of a brick or clay oven, to be served hot as breakfast on baking day.


▶The dough is the same as pizza dough, but it is not baked in the oven, rather fried in oil.


▶Adding sour cream, yogurt, or mashed potatoes to the dough is optional, in the latter case it’s called “potato lángos”, in Hungarian krumplis lángos, often served with butter and rubbed with garlic.

▶Lángos is popular all year round. Being a fairly cheap and simple food, it is often sold at bus stations, fairs, local markets, and in all Eastern European countries during local festivals or sports events.

Ingredients

  • 4 Potatoes
  • 1 1/4 cups Milk
  • 1 packet Instant Yeast
  • 1/2 teaspoon Sugar
  • 2 1/8 cups Flour
  • to taste Salt
  • to taste Vegetable oil

Steps

  • Boil the potatoes, mash them, add salt, and turn them into a puree.
    Warm the milk, dissolve the yeast with 1/2 teaspoon of sugar
    Let it rest for 5 minutes.
    Add the puree to the flour.
    Finally, add the yeast and knead.
    Let rise, covered, for 30 minutes.
    Form balls, flatten them, make two cuts, and let rise for another 30 minutes.
    Fry in plenty of oil.

    And serve rubbed with butter and garlic.

Lángos in Other Countries

In Austria, especially in Vienna, lángos is very popular as fast food at fairs and amusement parks like the Prater, Family Park.

It is known in the Czech Republic, Slovakia, and Croatia as langoš, in Serbia as languš (although it is commonly called “Mekike”).

In Slovenia as Langaš and in Macedonia and Bulgaria as Mekitsa.

It is also popular in Romania (especially in Transylvania) as langoși.

Also widespread in Poland where it is known as “langosz” and in the United Kingdom where it is called “langos” or “Hungarian fried bread”.
