The Mustikkapiirakka is a baked shortcrust pastry made with a dough base and blueberries.
➡️The dough is usually made of cereals (I used flour with added oats for the crust), sponge cake, or leavened dough.
➡️Potato starch and sugar are mixed with the blueberries to form a compact mass in the oven.
➡️During the Suomi 100 project for Finland’s independence centenary in 2017, Mustikkapiirakka was voted the most popular dessert by people of all ages. About 50,000 Finns participated in the vote.

Ingredients
- 5 oz butter
- 2 cups oat flour
- 1/2 cup sugar
- 1 tbsp baking powder
- to taste gluten-free oat flakes (optional)
- 1.1 lbs blueberries
- 2 tbsp potato starch
- 3/4 cup sugar
Tools
- 1 Baking Tray 27 cm
Steps
Prepare the shortcrust by mixing the melted butter with oat flour (or flour made from blended oat flakes) and sugar. Add the baking powder and, if desired, some oat flakes.
Line a 27 cm baking tray with the crust.
Mix the blueberries with sugar and potato starch. Spread the mixture into the crust shell.
Bake in the oven at 392°F for 30 minutes.
