Ndolé is a dish from Cameroon made from a vegetable plant called Ndolé with therapeutic virtues, whose leaves are consumed while still green.
▶In a preparation based on peanut paste and chopped spices, the following are added:
▪boiled ndolé leaves (which I replaced with spinach)
▪pieces of meat or smoked fish and/or fresh or dried shrimp
▶The dish is usually served with fried plantains or bobolo (cassava bread) or miondo (cassava sticks).

Ingredients
- 1 kg ndolé
- 10.5 oz peanuts
- 2.2 lbs beef
- 2 onions
- 3 cloves garlic
- to taste ginger
- 3 cups vegetable broth
- 20 dried shrimp (optional)
- 8.8 oz shrimp
- to taste salt and pepper
Steps
Boil the ndolé leaves 2 or 3 times in water with coarse salt.
Peel and blend the peanuts – after soaking or boiling them in water – with 1/2 onion, 1 garlic clove, ginger, pepper, and 2 tablespoons of water.
Cut the meat.
In a pot, add oil, onion, 2 garlic cloves, salt, and pepper. Add the meat, ndolé, 3 cups of broth, and the dried shrimp (optional).
Cook for 45 minutes, then add the peanut paste and continue cooking for another 30 minutes.
Fry the other half onion.
Sauté the shrimp in oil.
Serve topped with fried onions and shrimp. Accompanied by fried or boiled plantain.
