Pagash or Pagach or Pagac is a kind of pizza with mashed potatoes, leavened dough, and cheese, and sometimes also cabbage.

Ingredients

  • 4 cups flour
  • 2.5 tsp active dry yeast
  • 2 tsp salt
  • 2 tbsp butter
  • 1 lb potatoes
  • 1 tbsp butter
  • 2.5 oz grated cheese (Parmesan)
  • 0.5 cup milk
  • to taste white pepper
  • to taste garlic powder
  • 2.8 oz grated mozzarella
  • 5.3 oz cheddar (grated)
  • 8.8 oz grated mozzarella

Steps

  • Prepare the dough: combine the flour with 1 cup and 1/4 of warm water, add the yeast, salt, butter. Knead the dough, cover and let rise for 2 hours.

    Prepare the puree: boil the potatoes, mash them and then add the butter, 2 oz grated cheese, the milk, salt, white pepper, garlic, 2.8 oz grated mozzarella, and the other 0.3 oz of cheese.

    Spread the dough in an oiled 10×14 baking tray and bake at 572 °F for 5 minutes, remove from the tray, flip over and spread the puree, 8.8 oz grated mozzarella and the cheddar. Bake for another 15 minutes.
