Potato Farls and Boxty (Ireland)

Potato Farls and Boxty are part of a traditional Irish breakfast, which, along with soda farls and white pudding, sets it apart from a traditional full English breakfast.

A farl is any of various types of flatbread traditionally made by cutting a round into four pieces, it can be a quarter of a large flat scone, bannock, or oatcake.

Potato farls are very similar to Scottish tattie scones, and differ from them in larger size.

Boxty is a traditional Irish potato pancake: there are many recipes, but all contain finely grated raw potatoes and are all served fried on a griddle, they can be served with honey, butter or sprinkled with sugar or stuffed with vegetables, meat, or cheese or molded into farl shapes.

The recipes for Potato Farls and Boxty, which I served with bacon, are dedicated to the TV series “The Penguin” for the Golden Globe Menu, winner of the award for best lead actor in a miniseries to Irish Colin Farrell.

Ingredients

  • 23 oz potatoes
  • 1 cup flour
  • 2 tbsps butter (melted)
  • to taste salt and pepper
  • 17.6 oz potatoes
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 cup milk
  • 3 1/2 oz grated cheese
  • to taste salt and pepper

Steps

  • Boil the potatoes and while still hot mash them, add the flour, salt, pepper, and melted butter.

    Form into a ball.

    Roll out a 20 cm (8-inch) disk and divide it into 6 parts.

    Cook each piece in a pan with butter, 5 minutes per side.

  • Reduce 250g of boiled potatoes to a purée and combine them with the other potatoes (250g) grated with a coarse grater.

    Combine the flour, baking soda, salt, and pepper. Lastly, the milk.

    Fry in a pan with butter as if it were a pancake, and serve with grated cheese on top.

The series “The Penguin” is based on the character of the Penguin from DC Comics, it is a spin-off of the film “The Batman” (2022) and explores the rise to power of the Penguin in the crime of the gloomy and dark Gotham City.

  • Are hurleys and boxty the same recipe?

    The boxty dough can also be boiled like dumplings.
    This type of boxty is known as “boiled boxty” and is a traditional dish for the Halloween period in the “northern midlands” of Ireland, particularly in the counties of Cavan, Leitrim, and the southern parts of Fermanagh.

    The preparation of the dough requires squeezing excess moisture from the grated potato and combining it with mashed potatoes and flour, seasoned with salt. The dough is formed into round dumplings known as “hurleys”.
    The hurleys are dipped in a pot of boiling water and boiled for over half an hour.
    Sliced and then fried in a pan with butter.
    Modern variations may include currants and raisins, or be served with cornmeal sauce like steamed pudding.
