Ramazan Pidesi (Turkey)

The Ramazan Pidesi or Pan Pide is round and rather flat, with a crisscross patterned crust and is traditionally served during meals in the holy month of Ramadan, accompanied by cold cuts, cheeses, or jam.

Ramazan pidesi is a Turkish bread made from wheat flour with yeast and seasoned with sesame and Nigella sativa (black cumin) and is characterized by a distinctive checkerboard decoration.

This year (2022) Ramadan – the fasting month in Islamic religion – is from April 2 to May 2, while Eid al Adha is from July 9 to July 13.

I wanted to include this bread in the menu dedicated to the Islamic Easter because it is a typical leavened bread of the Islamic community.

Ingredients

  • 2 cups flour
  • 1 tbsp baking powder
  • 3/4 cup water (warm)
  • 1 tbsp sugar
  • 2 tsp olive oil
  • to taste nigella sativa (or sesame)
  • 1 egg yolk
  • to taste yogurt
  • to taste fine salt and coarse salt
