Before leaving Venice on March 10, 2019, we treated ourselves to one last exceptional risotto from the land of risottos and at the restaurant “Antica Osteria” we tasted the one with red radicchio and bacon, cooked in red wine.
The radicchio risotto (or Trevisan) is a traditional first course of Venetian cuisine, and the pairing with bacon makes the red radicchio from Treviso less bitter.
Here is a low FODMAP version, replacing the onion with the green part of the spring onion or leek, and lactose-free, using lactose-free or clarified butter.

Ingredients
- 2 cups Carnaroli Rice
- 1 Fresh spring onion (the green part)
- 12.3 oz Treviso red radicchio (early variety)
- 1 glass Red wine
- 3.5 oz Bacon (diced)
- 1.8 oz Lactose-free butter (or clarified)
- 2 1/2 cups Vegetable broth
- to taste grated cheese
- to taste salt, extra virgin olive oil
Preparation
Sauté the green part of the spring onion in a pan with some extra virgin olive oil, add the bacon, and stir occasionally until the bacon becomes soft and translucent without browning, then add the radicchio.
Next, add the rice and toast it for a few minutes in the pan: deglaze with the red wine and continue cooking by gradually adding the broth.
Season with salt.
When the rice is cooked, remove it from the heat and stir in a tablespoon of lactose-free butter (or clarified) and a generous handful of grated cheese.
Notes
Radicchio is from Treviso, grown in 24 municipalities between the provinces of Treviso, Venice, and Padua. There are two varieties: the early variety, more common, and the late variety, characterized by long, narrow leaves curled at the top, with a crunchy texture and slightly bitter taste (for more information: the 10 varieties of radicchio everyone should know).
