Plum Factory in Elvas:

The Fábrica Museu da Plum, formerly Frutas Doces factory, founded in 1919, is the oldest operating plum factory in Elvas. It still maintains today the tradition and quality of the best dried and syrupy fruit, producing according to old recipes and using exclusively plums from the orchards of the Elvas region.

At the factory, the plum undergoes the first cooking process: it is boiled only in water (in copper pots). After being well boiled (about ten minutes), it passes into a syrup of water and sugar.
