Shrimp Stroganoff

The Strogonoff or estrogonofe is a typical dish of Northern cuisine, especially Russian, with uncertain and mysterious origins.

In Brazil it appears on almost every “cardapio“, and after cooking the strogonoff de frango in Jericoacora during our trip to Santo André in April 2021, we tried the strogonoff de camarão, that is, made with shrimp.

The main ingredient changes, but the base remains the same: cream and tomato sauce, as in:

Ingredients for Shrimp Stroganoff:

  • 1 lb 2 oz shrimp
  • 1 onion
  • 3/4 cup cooking cream
  • 1 clove garlic
  • 1 tablespoon butter
  • 3/4 1/3 cup tomato sauce (or ketchup)
  • 1 tablespoon mustard
  • to taste salt and pepper

Preparation

  • Clean the shrimp by removing the head and deveining them.

    Put the butter in a pan and add the onion.

    When the onion is golden, add the garlic so it browns without burning.

    When it is golden, add the shrimp, salt and pepper; stir to prevent the shrimp from sticking to the bottom of the pan.

    As soon as any liquid from the shrimp has evaporated, add the mustard and the tomato sauce and stir.

    Finally incorporate the cream and remove from the heat before it comes to a boil.

    Serve with white rice and batata a la palha (shoestring potatoes) or french fries.
