S’mores blondies are the first recipe of the Sanremo Festival Menu for the column “Building the menu”, this year dedicated to foreign singers who competed at the event.
A decidedly “Made in USA” dessert that combines three American culinary preparations: s’mores with graham crackers + blondie.
The S’mores are American sweet sandwiches: grilled chocolate and marshmallow enclosed in two graham crackers.
The Graham Cracker is a sweet flavored cracker originally made with graham flour (a coarse whole wheat flour), oil, fat or lard, molasses, and salt.
The Blondie is a variant of brownies, the well-known chocolate squares, with vanilla instead of cocoa or chocolate, brown sugar instead of regular sugar, and the addition of white chocolate.
The dessert is dedicated to the song “Mi va di cantare”, a musical piece composed by Vincenzo Buonassisi, Giorgio Bertero, Marino Marini, and Aldo Valleroni, presented at the 1968 Sanremo Festival in a joint performance by Lara Saint Paul and Louis Armstrong.
Pippo Baudo, accompanied by Luisa Rivelli, made his debut as the host of Sanremo in the edition won by Sergio Endrigo and Roberto Carlos with “Canzone per te”.
The competition took place over three nights, from February 1 to 3.
All artists participated in pairs, each performing the song separately.

Ingredients
- 6.7 oz graham crackers (or digestive)
- 2 tbsps sugar
- 1/4 cup water
- 3.5 oz butter (melted)
- 2 tbsps butter
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 2 eggs
- 1 1/4 cups brown sugar
- 1 tbsp cornstarch
- 1/2 cup flour
- 1 pinch salt
- 3.9 oz white chocolate cream (or white chocolate)
- 5 oz mini marshmallows

- 1 Baking pan 9-inch square
- 1 Spatula
Steps
Crush the graham crackers, add 2 tablespoons of sugar, and blend.
Add the melted butter, mix, and cover the baking pan lined with foil.
Bake in the oven at 356°F for 10 minutes.
Combine the water with the butter and brown sugar, mix.
Add the oil and vanilla.
Let it rest for 5 minutes.
Add the beaten eggs and work the mixture with a spatula. Finally, add the cornstarch, salt, and flour.
Spread over the graham crackers base and bake in the oven at 356°F for 25 minutes.
Distribute the marshmallows and grill for a few minutes.
Let cool and cut into squares.
The Sanremo Festival of 1968 was meant to appease the general discontent that arose from the suicide of Luigi Tenco in 1967. The edition in the most heated and rebellious year of the century was lightened with songs far from revolutionary and distant from the protest of the beatniks.
