Mousse is a light preparation based on eggs, sugar, semi-whipped cream, flavors, chocolate or fruit, and gelling agent (optional in the case of dark chocolate mousses).

The bavarois is similar to a pudding. Its base consists of a crème anglaise – a custard without flour – with the addition of gelatin.

The semifreddo has as its main ingredient, as in the case of mousse, whipped egg whites, even in the form of meringue. Unlike bavarois which requires crème anglaise and a thickener, the semifreddo is finished with the addition of whipped cream and served cold.
