STRAWBERRIES BLUEBERRIES and COCONUT CUPS, super simple and delicious, the perfect dessert to enjoy after lunch made in just a few minutes with fresh fruit, cream and coconut.

Today I wanted something refreshing without doing too much cooking, and that’s how these strawberry blueberry and coconut cups were born: quick, colorful and super tasty 😍 I swear, I made them in 5 minutes and they disappeared even faster!

The great thing about these strawberry blueberry and coconut cups is that they are light, creamy and perfect when you have unexpected guests or simply want to treat yourself to a no-bake spoon dessert. Juicy strawberries, sweet blueberries, soft whipped cream and that hint of coconut that gives it an extra kick
 a simple mix that always works.

STRAWBERRIES BLUEBERRIES and COCONUT CUPS

Ingredients

  • 2 cups heavy whipping cream
  • 1 1/2 cups strawberries (sliced)
  • 1 cup blueberries
  • 3/4 cup + 1 tbsp vanilla powdered sugar
  • 1 cup desiccated coconut
  • lemon juice

Steps

  • Wash the strawberries and blueberries. Cut the strawberries into pieces and toss them with a little sugar and the lemon juice. Let rest for 10–15 minutes.

  • Whip the very cold cream with the vanilla powdered sugar until soft peaks form. Fold the grated coconut into the whipped cream, mixing gently from the bottom up.

  • Assemble the cups by layering coconut cream, a layer of strawberries, a layer of blueberries, more cream and finish with fresh fruit on top.

  • Refrigerate for at least 30 minutes before serving.
