Farro with Shrimp and Cherry Tomatoes

Farro with shrimp and cherry tomatoes is a hearty main dish and a great alternative to pasta. This dish is also delicious cold and perfect for enjoying outside, such as for an office lunch. Farro with shrimp and cherry tomatoes

Ingredients

  • 3/4 cup pearled farro
  • 7 oz shrimp
  • 4.4 oz cherry tomatoes
  • 1 clove garlic
  • to taste dried oregano
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To prepare the farro with shrimp and cherry tomatoes, rinse the shrimp under running water, remove the head, legs, and shell, then remove the internal intestine: make an incision along the back of the shrimp with a knife and gently pull it out, trying not to break it.

  • In a pan, pour a drizzle of extra virgin olive oil and the chopped garlic, if you like, also add some chopped chili pepper. Place on low heat and let it warm up.

  • Then add the cherry tomatoes cut in half and cook on low heat for about 5 minutes. Finally, add the shrimp and continue cooking, adding a bit of water if necessary.

  • Cook the farro in plenty of salted water, following the timing indicated on the package. Once ready, drain it and add it to the pan with the shrimp, also add a sprinkle of oregano.

  • Mix to combine the ingredients. Serve and enjoy your meal!
