Ingredients
- 3/4 cup pearled farro
- 7 oz shrimp (about 7 oz)
- 1 cup cherry tomatoes
- 1 clove garlic
- to taste dried oregano
- to taste extra virgin olive oil
- to taste salt
Steps
To prepare the farro with shrimp and cherry tomatoes, rinse the shrimp under running water, remove the head, legs and shell, then remove the intestinal tract: make a cut along the back of the shrimp with a knife and pull it out gently, trying not to break the shrimp.
In a pan pour a drizzle of extra virgin olive oil and the chopped garlic; if you like, add some chopped chili pepper as well. Put over low heat and warm.
Then add the cherry tomatoes cut in half and cook over low heat for about 5 minutes. Finally add the shrimp and continue cooking; if necessary, add a little water.
Cook the farro in plenty of salted water, following the timing indicated on the package. Once ready, drain it and pour it into the pot with the shrimp, also add a sprinkle of oregano.
Stir to combine the ingredients. Serve and enjoy!
