These lentil and potato patties originated, as always happens to me, from having an ingredient at home and wanting to use it. You might ask, the lentils? The potatoes? No! The parsley! Yes, I had this bunch of parsley ordered online by mistake (I usually get the plant), and I wanted to use it…
Parsley calls for potatoes, and then we need some protein, right? Chickpeas or lentils? I opted for lentils, so I made patties. And here I prepared these delicious vegan patties, as always, in my beloved air fryer, the Philips Airfryer XXL.
I know I shouldn’t say this on my blog, but I think these patties would be much tastier fried, but we’ll stick with the oven, just pretend I didn’t even write it!!! I quickly gloss over this not-so-diet-friendly sidebar and move straight on to the recipe…

Ingredients
- 10 oz cooked lentils (from dry, cook about 2.8 oz)
- 1.1 lbs potatoes (I don't peel them because the skin is healthy!)
- 1 carrot
- 1 onion
- 2 cloves garlic
- 5 g nutritional yeast
- 1 tsp ground cumin
- 1 tbsp soy sauce
- 1 bunch parsley
- 20 ml extra virgin olive oil (1 tbsp goes in the mix and 1 tsp is for cooking. Use measuring spoons!)
- to taste thyme (in powder)
- 1 tsp salt
- Total points = 20 WW points
- Points per patty = 1 WW point

Steps
As always, prepare and measure all the ingredients, please!
Start with the potatoes: wash them well with a brush, dice them, and boil in lightly salted cold water for 10-15 minutes, just until tender. Mash and let them cool.
Put the chopped onion, carrot, and garlic, dried thyme, cumin, and parsley into the blender. Add well-drained lentils, soy sauce, salt, and oil and pulse blend. Leaving some chunks gives the patties a bit of texture that makes them tastier, in my opinion.
Place the mixture in a bowl, add the nutritional yeast and the now-cooled mashed potatoes, and mix well with your hands. Taste and adjust salt if necessary.
Form slightly flattened patties. I use an ice cream scoop, which is very convenient for making uniform patties. With this tool, I made 20 patties. You can also make 40 smaller ones if you prefer! Brush the patties lightly on both sides with a little oil. 1 teaspoon is enough for all the patties.
For 20 patties, cooking needs to be done in 2 batches. Start by placing 10 patties in the air fryer basket on a piece of parchment paper. Cook at 340°F for 15 minutes, then carefully lift them (they will still be a bit soft) and remove the parchment paper. Place the patties back in the basket, turn them over, and cook for another 15 minutes at 340°F. If you want them more golden, leave them to cook for a few more minutes. Repeat for the other 10 patties. At the end, you can put them all together in the basket for 5 minutes since they won’t stick to each other.
Place the patties on a baking tray lined with parchment paper and bake at 350°F-400°F for about 30-40 minutes, turning them halfway through. Depending on the oven, it may be necessary to cook them a bit longer.
And here the lentil and potato vegan patties are ready! Beautiful and delicious, they contain carbohydrates and proteins; serve with a side of vegetables, and dinner is ready!
We tried them hot, warm, and cold. Warm, they are tastier, but we gladly ate them right out of the air fryer and later cold! They are really delicious, with a crispy crust outside and soft inside…

As mentioned before, these patties are good at any temperature, but we preferred them warm, not boiling, so to eat 10 minutes after taking them out of the oven.
