FLAT APPLE CAKE RECIPE You surely know Marco Bianchi who, besides the blog, hosts a very interesting show on channel 33 Food Network — especially because, as a scientist, he defines the basic principles, benefits, etc., of the foods he uses in his recipes, and you learn many important insights for our diet.
During one of his programs he prepared the flat apple cake which I made for my blog with a few small changes! I used fewer amaretti and added a teaspoon of mascobado and the result is a “healthy” cake with lots of fruit and a soft texture!

Ingredients – FLAT APPLE CAKE RECIPE

  • 28 oz apples (about 6 medium apples (approximately 1.75 lb))
  • 1 cup walnuts (roughly 3.5 oz, chopped)
  • 3 cups type 2 flour (stone-ground for me (Almaverde bio))
  • 1 7/8 cups milk (about 15 fl oz (450 ml))
  • 6 tbsp mascobado (unrefined cane sugar) (+ 1 teaspoon to sprinkle on top before baking)
  • 1 packet baking powder
  • 3.5 oz amaretti cookies (I used only half (about 1.75 oz))
  • 8 tbsp corn oil ((about 1/2 cup))
  • 1 lemon (juice)
  • as needed ricotta (optional)
  • as needed powdered sugar (optional)

Preparation – FLAT APPLE CAKE RECIPE

  • Cut the apples — wash and dry them, then slice into fairly even wedges.

    Cook them in a small non-stick saucepan until tender, adding a little water if needed.

    Drizzle them with a little lemon juice and let them cool.

  • Mix the sifted flour with the baking powder, the sugar, the coarsely chopped walnuts, and the amaretti crumbled roughly with your fingers.

  • Pour in the liquids (milk and oil) and mix everything well.

  • Line a baking pan with parchment paper, pour in the batter, then arrange the apple slices on top and sprinkle the sugar that I added instead of using more amaretti.

  • Bake at 356 °F for about 30 minutes, or according to your oven’s characteristics.

  • If you like, serve the flat apple cake with ricotta whipped with powdered sugar. Enjoy this very healthy apple cake….
