In some towns in Abruzzo, it’s not Easter if these cakes are not prepared, it’s really a ritual I assure you… then if you get carried away, sometimes they are made in large
quantities.
During the Easter holidays, it’s eaten for breakfast, as a snack… every occasion of the day is good!
They have a fragrance, especially during cooking, that fills the whole house and you can’t wait for them to finish baking to try a slice.

Ingredients for making the Easter Ring Cake
- 1 Medium egg
- 0.9 oz Butter or margarine
- 5 tablespoons Sugar
- 2/3 cup Whole milk
- 0.35 oz Fresh yeast
- Grated zest of 1 lemon
- 1 packet of vanillin or 1/2 teaspoon of liquid vanilla
- to taste Ground cinnamon
- 3 1/4 cups All-purpose flour
- 1 Egg yolk
- 1 Splash of milk
- 1 teaspoon Sugar
- to taste Colored sprinkles
Preparation of the Easter Ring Cake
In a mixer or stand mixer, dissolve the fresh yeast, then gradually add all the ingredients while mixing at medium speed.
Once all the ingredients are combined, add the flour little by little until you obtain a homogeneous, non-sticky dough.
If you use a hand mixer, work until you can, then transfer everything to a work surface and finish kneading.
Let the dough rise until it doubles in size.
then divide the dough to form 2 rings and place each on a baking tray lined with parchment paper. Let them rise in a warm place for at least 3 hours.
After rising, brush each cake with a mixture of egg, a pinch of sugar, and a splash of milk. Decorate with colored sprinkles as desired.
Bake at 356°F for approximately 30 minutes, checking for doneness.
They should be golden.
