Ingredients
- 4 eggs
- 3 oz erythritol
- 2 cups ricotta (drained if very wet)
- 1/2 cup potato starch
- a pinch of salt
- vanilla extract
- 2-3 tbsp liqueur of your choice (I suggest Limoncello or Strega)
- 2.5 oz dark chocolate
Steps
Transfer the ricotta to a large bowl and add the erythritol. Whisk vigorously until you obtain a smooth, homogeneous cream without lumps.
Separate the yolks from the whites and add the yolks to the ricotta cream. Add the vanilla extract, sifted potato starch and the chosen liqueur. Gently mix with circular motions until you obtain a uniform mixture.
In a clean bowl, beat the egg whites until stiff with a pinch of salt. Fold them into the ricotta and yolk mixture using gentle upward strokes so as not to deflate the mixture.
Gently fold in the dark chocolate chips or chopped pieces, distributing them evenly throughout the batter.
Line a 7–8 inch (18–20 cm) pan with parchment paper and pour in the batter, smoothing the surface gently with a spatula.
Preheat the oven to 347°F (175°C) in conventional (no fan) mode. Bake for about 40 minutes, avoiding opening the oven during the first 25–30 minutes. Leave the cake in the pan for 10–15 minutes with the oven turned off and the door slightly ajar.
Carefully remove from the pan and serve the light ricotta and chocolate cake, decorating as you like.
