- 11 oz Pasta
- 1 Avocado (ripe)
- 4 oz Smoked salmon
- 1 Lemon
- Salt
- Pepper
- Extra virgin olive oil
- Onion (finely chopped)
How to make Pasta with Avocado Cream and Salmon
Let’s start preparing the Pasta with Avocado Cream and Salmon: finely chop the onion, wash the lemon, pour water and a pinch of salt into a pot, bring to a boil, and when it boils add the pasta and cook for the time indicated on the package.
While the pasta cooks, heat 3 tablespoons of extra virgin olive oil in a pan, add the finely chopped onion and sauté lightly, add the smoked salmon cut into small pieces and cook for 2 minutes, then turn off the heat.
Cut the avocado in half lengthwise, remove the pit and scoop out the flesh with a spoon into a bowl. Add a pinch of salt, a pinch of pepper, the grated lemon zest and 1 tablespoon of lemon juice. Mash the avocado with a fork until creamy and slowly drizzle in extra virgin olive oil while stirring.
When the pasta is cooked, drain it, reserving some of the cooking water which will be used to emulsify it. Pour the pasta into the pan with the salmon, add the avocado cream and a few tablespoons of pasta cooking water to toss it and make it creamy.
Serve the Pasta with Avocado Cream and Salmon hot, or if you prefer to eat it cold, keep it refrigerated until serving.
