Ricotta and Peas Pasta

Ingredients

  • 14 oz pasta
  • 2 1/2 cups peas
  • 7/8 cup ricotta
  • Half onion
  • lemon zest (grated from one lemon)
  • extra virgin olive oil
  • salt
  • pepper

Preparation of ricotta and peas pasta

  • Place a pot filled with water on the stove and bring it to a boil.
    When it reaches a boil, add the peas and salt.
    Let them cook for fifteen minutes.

  • Chop the onion.
    Heat a drizzle of oil in a large frying pan or wok and lightly brown the onion.
    Add the well-drained ricotta and the grated lemon zest and stir over low heat until you obtain a creamy mixture.
    After the first fifteen minutes of cooking the peas, add the pasta as well and cook it for the time indicated on its package.

  • Drain the pasta together with the peas and add them to the pan with the ricotta, mixing thoroughly and adding another drizzle of extra virgin olive oil and adjusting the salt if necessary.
    Serve your ricotta and peas pasta on plates, finishing if you like with some freshly ground pepper.
