Ingredients

  • 1 lb 2 oz ground beef
  • 1 oz (about 1/3 cup) grated Parmesan
  • 9 oz (about 2 cups, well drained) spinach, cooked, boiled (frozen or fresh)
  • 1 egg
  • 1 tsp salt
  • to taste lemon zest (grated)
  • 3.5 oz (about 3-4 slices) cooked ham
  • to taste lemon zest
  • 2 oz (about 1/2 cup) cheese

How to make Meat Panzerotti with Spinach

  • In a large bowl put the ground beef, the egg, the Parmesan and the salt; also add the spinach—make sure it is well squeezed—and cut with a knife, then add the rest of the ingredients.

  • At this point, knead with your hands, mixing the ingredients well.

  • Take a small portion of about 130 grams (about 4.6 oz), shape it with your hands into a large meatball and flatten it.

  • Place the meat on plastic wrap and flatten it. Open the plastic wrap and fill the meat with cooked ham and cheese.

  • Close the panzerotti giving them the classic shape.

  • Coat them in breadcrumbs. Cook them in an air fryer or in the oven with a drizzle of oil on top for about 12-15 minutes at 356°F or until golden.

Storage and tips for meat panzerotti with spinach

You can prepare them well in advance and keep them in the refrigerator for up to 12 hours, covered with plastic wrap until ready to cook. You can add to the mixture the spices you prefer: paprika, nutmeg or curry. Alternative cooking methods include pan-frying with a drizzle of olive oil or baking in the oven at 356°F for about 15-20 minutes.
