Ingredients

  • 3 eggs
  • 1 2/3 cups all-purpose flour
  • 2 1/2 tsp instant baking powder for savory preparations (gluten-free)
  • 2 pinches salt
  • 1 1/2 tbsp olive oil (+ for greasing the pan)
  • 1/3 cup milk
  • 1/2 cup plain natural yogurt
  • 5 oz cooked ham
  • 4 oz mozzarella
  • 8 cherry tomatoes
  • to taste lamb's lettuce

How to make Very Soft Savory Pancakes

  • In a large bowl beat the eggs with the salt, then pour in the milk and the oil.

  • Add the yogurt and incorporate the sifted flour and baking powder, mix well until you obtain a smooth, creamy batter.

  • Heat a non-stick pan lightly greased with oil or butter and then pour two tablespoons of batter.

  • Cook the pancakes over medium heat with a lid, about 2 minutes per side.

  • Fill the pancakes with lamb’s lettuce, mozzarella, cherry tomatoes seasoned with salt, oregano and oil, and the ham.

  • Close with another pancake.

Storage for Very Soft Savory Pancakes

Pancakes can be stored in an airtight container in the refrigerator for up to 3 days. You can fill the pancakes with other cured meats and cheeses.
