The ones I want to tell you about today are simple and exquisite eggplant burgers. Few and simple ingredients, egg-free, and in a short time you can prepare delicious burgers perfect as a light main course and special for filling a sandwich. You can prepare them in advance and keep them in the fridge or even freeze them. Let’s go to the kitchen and prepare some delicious Eggplant Burgers together.

INGREDIENTS FOR EGGPLANT BURGERS
- 1 eggplant (large)
- 1 cup stale bread (crumbs)
- 5 tbsp grated Parmesan cheese
- 1 clove garlic
- 1 sprig parsley
- as needed extra virgin olive oil
- to taste salt

HOW TO PREPARE EGGPLANT BURGERS
Wash the eggplant. Remove the stem and base and, without peeling, cut it first into thick slices and then into cubes. Pour 2-3 tablespoons of extra virgin olive oil and one clove of garlic into a pan. Add the eggplant cubes and let them cook for 10-12 minutes over medium heat, turning them often with a wooden spoon.
Remove the clove of garlic and transfer the cooked eggplant to a bowl. Add the torn stale bread crumbs, the grated Parmesan cheese, chopped parsley and a pinch of salt. Mix well.
To form the eggplant burgers you can use a ring mold, the specific hamburger press or simply a glass or cup. Put one tablespoon of breadcrumbs inside the ring mold. Spoon some of the mixture into it. Cover with another tablespoon of breadcrumbs and press with your hands to shape an eggplant burger.
Form them all the same way until the mixture is used up. With these quantities I made 5 burgers, but it depends on how large you make them. I cook them simply in a pan with a drizzle of extra virgin olive oil, but you can also bake them in the oven at 374°F for 15-16 minutes.

Loredana’s Tips
You can prepare the burgers in advance and store them in a container in the fridge for one day or you can also freeze them.
They are also great for filling a sandwich with the addition of a few tomato slices, a slice of cheese and a bit of mayonnaise.
You can substitute the bread crumbs with 4-5 slices of sandwich bread.
