I prefer head cabbage to Savoy cabbage because I find it more tender and sweeter in taste, but if you prefer you can easily substitute it with Savoy cabbage. INGREDIENTS FOR THE CABBAGE SIDE DISH
- 1.1 lb head cabbage
- 3 oz pitted black olives (pitted)
- 1/3 cup raisins
- 2 white onions
- 3 tbsp extra virgin olive oil
- to taste salt
HOW TO PREPARE PAN-FRIED CABBAGE
First, put the raisins in a bowl with warm water and let them soften. Clean the head cabbage by removing the tough core and the outer leaves.
Cut the cabbage into thin strips and then rinse it under running water. Drain it well. Pour 3 tablespoons of extra virgin olive oil into a large skillet. Add the two peeled onions, sliced thinly.
Add the cabbage to the skillet and let it cook over medium heat for 2-3 minutes, stirring often with a wooden spoon. Add the sliced olives and the drained raisins. Season with salt.
Cover the skillet with a lid and let the Pan-fried Cabbage cook over low heat for another 10 minutes. Stir occasionally. If it tends to dry out too much, add a few tablespoons of water.
