Today I prepared a delicious one-dish meal made with beef, rice and vegetables. Boiled beef with rice and vegetables is not a difficult recipe to prepare, but it requires fairly long cooking. It is during this slow cooking that the meat becomes tender and flavorful, while the broth fills with the aromas of the ingredients.
To prepare it I chose a cut of beef for boiling recommended by my trusted butcher and added simple vegetables like carrots, celery stalks and potatoes, plus an onion to add even more flavor to the broth.
Separately I cooked the rice and seasoned it with Parmesan, butter and a little broth. The result? A complete, nourishing dish perfect for the whole family.
It’s an ideal recipe especially on colder days, when you crave something warm and wholesome.

Ingredients for Boiled beef with rice and vegetables
- 1 lb 12 oz beef (for boiling, cut into 4 pieces)
- 13 cups water
- 4 potatoes
- 4 carrots
- 4 stalks celery
- 1 onion
- 1 1/4 cups Carnaroli rice
- 1 1/2 tbsp butter
- 1 oz grated Parmesan
- as needed water
- to taste salt
- 2 lemons (juice)
Preparation BOILED BEEF WITH RICE AND VEGETABLES
Peel the onion and roughly chop it.
Put about 13 cups of cold water in a pot, add the chopped onion and bring to a boil.
When the water starts to boil, salt to taste and immerse the pieces of meat.
Wait for the water to return to a boil, then lower the heat and let it simmer gently for 90 minutes, removing the impurities that rise to the surface with a skimmer.
After 90 minutes add the celery stalks and continue cooking for another 20 minutes.
Wash the carrots (choose very fresh ones so there is no need to peel them), put them in the pot and continue cooking for another 20 minutes.
Finally, add the peeled potatoes and cook for about 20 more minutes (poke the potatoes with a skewer to be sure of the doneness).
Meanwhile, cook the rice in salted water, then drain it.
Season the cooked rice with the butter and Parmesan and mix well.
Arrange on individual plates, or on a serving platter, the meat, rice, potatoes, carrots and celery. Pour a few tablespoons of meat broth over the rice and squeeze lemon juice over the meat.
Serve the boiled beef with rice and vegetables hot.
