- 18 oz asparagus
- 5 eggs
- 3 tbsp milk
- 2 tbsp grated Parmesan
- 1 tbsp extra virgin olive oil
- to taste fine salt

Steps for clever asparagus frittata
To prepare the delicious clever asparagus frittata, start by removing the toughest part of the asparagus stalks: they will snap off naturally with a little pressure from your hands. Then wash them thoroughly under running water.
On a cutting board, slice them into rounds that are not too thin.
Fill a saucepan with water and bring to a boil. Once boiling, add the asparagus and cook for about 5-6 minutes until they are tender but not falling apart. Then drain them and let them cool.
Meanwhile, in a bowl whisk the eggs with a hand whisk with salt, add the milk and Parmesan and mix well. Finally add the previously cooked asparagus at room temperature.
Heat an 8.7-in pan or a 9.5-in pan if you want it less thick, previously oiled with the extra virgin olive oil, over medium heat; when the oil is hot, pour in the mixture. Cook over low heat with a lid for about 5-7 minutes or until it has set. Flip it by sliding it onto a flat plate or the lid, and cook for another 5 minutes over low heat.
