I had some puff pastry to use and a bit of mascarpone in the fridge 😍 and instead of making the usual dessert I prepared these tiramisu cannoli with puff pastry, a perfect mix between quick single-portion desserts and super creamy coffee desserts.

Ingredients
- 1 sheet puff pastry
- 9 oz mascarpone
- 2 tbsp instant coffee
- 2 tbsp sugar
- 3.4 fl oz plant-based whipping cream (replaces the egg)
Steps
Cut the puff pastry into 6 squares of about 4 in (or smaller if you want to make more, but always consider the size of the metal cannoli tubes; mine are large).
Place the pastry squares on the work surface with the points up and down, like a diamond. Put a cannoli tube in the center and wrap without tightening too much.
Cook in the air fryer at 356°F for 6 minutes or in the oven at 356°F for about 10 minutes.
Put the mascarpone with the coffee and sugar in a bowl and work with a hand blender; add half of the cream and mix, if too thick add more and mix again.
When the cannoli are cold, put the cream into a piping bag and fill them, dust with powdered sugar and serve.
