I had very little time and everyone was hungry 😅 so I prepared this scarpariello pasta, a lightning-fast spaghetti and it was one of those lunches solved on the fly but with an amazing result.

Ingredients
- 9 oz spaghetti (or penne mezzane)
- 14 oz cherry tomatoes (halved (about 2 2/3 cups))
- 1 clove garlic
- chili pepper (optional)
- 2 oz grated Parmesan (about 1/2 cup)
- 2 oz grated Pecorino (about 1/2 cup)
Steps
Bring the water to a boil for the pasta. Cut the cherry tomatoes in half.
Heat oil and garlic in a large pan, add the halved cherry tomatoes
salt lightly and let cook 10–15 minutes until they become soft and creamyCook the spaghetti in salted water, drain them al dente, reserving a little cooking water and add them to the sauce.
Add Parmesan and Pecorino, stir in the chili pepper and a little of the reserved pasta water and toss vigorously; the cheese will melt and create a velvety cream.
Turn off the heat, add fresh basil torn by hand. Serve immediately.
