FRESH FRUIT POPSICLES

Fresh fruit popsicles are cold, refreshing treats, essential in summer to beat the heat, and they’re easy to prepare at home. If you don’t have specific molds, you can use simple cups or freezer-safe containers. In this recipe we’ll prepare strawberry popsicles. However, with the same procedure you can make popsicles with different fruits: blackberries, watermelon, peach… Or add a few tablespoons of mint syrup, orgeat, or any other flavoring syrup you prefer to the sugar syrup. Below, let’s see what you need for our homemade fresh fruit popsicles:

  • Portions: for 10 small popsicles

Ingredients

  • 1 1/3 cups strawberries
  • 3/4 cups granulated sugar
  • juice of 1/2 lemon
  • 1 cup water

Steps

  • Quickly wash the strawberries in ice-cold water, drain them and pat them dry thoroughly.

  • Remove the hulls, then puree them with an immersion blender and pass the mixture through a sieve, collecting it in a bowl.

  • In a small saucepan, dissolve the sugar in the water over low heat. Let the syrup boil for a couple of minutes, then remove from the heat and let it cool.

  • Take the strawberry purée, add the lemon juice and the now-cooled syrup, and mix everything together.

  • Fill the popsicle molds, insert a wooden stick in the center of each, and place them in the freezer for at least 3 hours.

  • The fresh fruit popsicles are ready to serve. They can be stored in the freezer for about 2 weeks.
