If you are looking for a refined yet easy-to-make dessert, the Millefoglie with custard and meringue is the perfect choice. A great classic of pastry, here proposed in a homemade version, with few ingredients but lots of love.

The crunchiness of puff pastry blends with the softness of custard and the sweetness of meringue, creating a perfect balance of texture and flavor.

An ideal dessert to conclude a special dinner or to enjoy in a moment all to yourself.
In my video on YouTube I show you all the steps to prepare it simply and creatively, in the relaxing and authentic style that distinguishes my channel Arte e Fantasia a Tavola.

Steps

  • Unroll one puff pastry at a time, cut out a smaller circle of 8 inches and keep the scraps, prick it with a fork.
Sprinkle with brown sugar and bake in a static oven at 356°F for about 15 minutes, until golden and crispy.
    Once baked, let it cool.

  • Assemble the millefoglie
Place the first layer of puff pastry, spread a portion of custard and some crumbled meringue.

Cover with the last layer of puff pastry, coat the edges with more custard and a mix of crushed puff pastry with more crumbled meringues, generously covering the entire side of the cake

Storage
The millefoglie can be stored in the refrigerator for up to 2 days, well covered with plastic wrap or in an airtight container.
I recommend assembling it just before serving, so the puff pastry will maintain its crispness.

Useful Tips
For even crispier pastry, you can bake it between two trays, so it stays flat and even.
If you have time, make the puff pastry from scratch for an even more authentic result.
The custard can also be flavored with natural vanilla or an orange peel for a different touch.
The Italian meringue (made with hot sugar syrup) is more stable and shiny: perfect if you want a professional effect.

FAQ (Questions and Answers)

  • 👉Can I prepare the millefoglie in advance?

Yes, you can prepare the custard and meringue the day before, storing them in the refrigerator. I recommend assembling the dessert just before serving it, to keep the puff pastry crisp.

  • 👉 Can I use homemade puff pastry?

Absolutely yes! You will get an even flakier and more artisanal result. It takes more time, but if you love kneading, it’s worth it.

  • 👉 Can I replace the meringue?

Yes! You can replace it with whipped cream, white chocolate ganache, or simply dust with powdered sugar for a simpler version.

  • 👉 Can I freeze the millefoglie?

No, it is not recommended to freeze it already assembled, as the puff pastry would lose its crispness and the custard would change consistency. Better to freeze only the cooked puff pastry, if necessary.
