Tempeh is a vegan food, fermented and made from yellow soybeans. Widely used in Indonesia and other Southeast Asian countries, it is also known as ‘soy meat‘ due to its texture (reminiscent of chicken) and protein content.
A truly versatile ingredient that can be used in many recipes. In this occasion, we wanted to combine tempeh with some fairly standard vegetables from our cuisine, along with some oriental ingredients to give it the right touch.

Ingredients
- 2 carrots
- 1 zucchini
- 5.3 oz tempeh
- 1 pinch salt
- 1 tbsp sesame oil
- 1 glass water
- 1 tbsp teriyaki sauce
- to taste sesame seeds
- 7 oz frozen green beans

Steps
First, take the carrots and zucchini. After peeling them well with a peeler, cut them into sticks by making long linear cuts. Once done, set aside temporarily.
Next, take the tempeh and cut it into regular cubes, first making horizontal cuts and then vertical ones to obtain squares more efficiently.
To proceed, heat a tablespoon of sesame oil in a non-stick pan and then add the tempeh cubes. Sear for a few minutes until the tempeh turns amber. When it’s ready, set the cubes aside.
In the same pan, heat a drizzle of olive oil or, if you prefer, sesame oil and then add the previously cut vegetables. Also add the frozen green beans and a glass of water. Mix everything and get ready for the next step.
At this point, add a pinch of salt, stir, and let cook over medium heat with the lid on for about 15 minutes or until the vegetables are cooked but still slightly crunchy.
To finish, remove the lid and add all the tempeh cubes back into the pan, add the teriyaki sauce, and sauté for a few minutes over high heat until all the ingredients are well mixed.
To finish, place a generous portion of tempeh with vegetables on a plate and garnish with more teriyaki sauce and sesame seeds to taste!
Tips
Let the vegetables cook enough but maintain their crunchiness. Adjust the amount of water to add in the pan, starting with a small amount and then adding more water depending on the desired level of cooking.
