Mini Pizzas with Brioche Dough

Once again, I find myself presenting yet another creation made with brioche dough! A very versatile dough that can be used to make many things like pizza by the slice, Palermo street food, fried donuts, and much more!

Here, specifically, I prepared very soft mini pizzas with classic toppings. These kinds of mini pizzas are typical of southern bars where they are often served with the well-known pieces of street food.

Ingredients

For the Mini Pizzas with Brioche Dough

  • 4 cups all-purpose flour
  • 1 cup water
  • 0.88 oz fresh yeast
  • 3.5 tbsp lard
  • 3.5 tbsp sugar
  • 2 tsp salt
  • to taste tomato sauce
  • to taste cooked ham
  • to taste mozzarella block for pizza

Steps

To make the Mini Pizzas with Brioche Dough

  • Start by putting the flour, water, yeast, and sugar into the mixer. Mix for 3 minutes, then add the salt and mix for 1 minute.

  • At the end, bring all the dough onto a work surface and create a smooth, homogeneous ball. Place the ball inside an airtight container and let it rest for 30 minutes at room temperature.

  • After the resting time, bring the dough back to the work surface and form a loaf. With the help of a scale, form pieces weighing 100 grams each.

  • To continue, create balls by making circular movements with the palm of your hand and place them inside an airtight container. At this point, let them rise for 1.5 hours at room temperature.

  • After the rising time, take the dough pieces out of the container and flatten the balls, first with your fingertips and then with a rolling pin until you form a disk. Gradually lay all the disks on a baking tray lined with parchment paper and let them rise for 1.5 hours inside the oven with only the light on.

  • Finally, take the baking tray out of the oven, lightly press the center of the dough pieces, and top with tomato sauce and ham. Add whatever you like; for example, I also added hot dogs, and then bake at 428°F (220°C) for about 12 minutes. (Add the sliced mozzarella only for the last 2 minutes of baking).

  • Finally, remove the baking tray from the oven and garnish with a few fresh basil leaves and a drizzle of oil. Let rest for a few minutes before serving!

Tip!

Top your mini pizzas with ingredients you prefer. Just remember to add the mozzarella during the last 2 minutes of baking to prevent it from burning.

    Of course, you can store them in the fridge for about 2 days and reheat them as needed.
