Recipe: tiramisu with colomba and berries
The procedure is the same as in my classic mascarpone cream recipe, but for this tiramisu you will need exactly half the amount.
Here’s how to proceed for today’s tiramisu:
Break 2 eggs and separate the yolks from the whites.
Beat the yolks with the sugar, then add the mascarpone and mix very well until there are no lumps left.
In another bowl, whip the egg whites to stiff peaks with a mixer, then fold them into the mascarpone mixture and gently combine, stirring from the bottom up so you don’t deflate them.
Slice the colomba and then cut it into pieces not too large, so they fit easily into the cups.
Spread a layer of mascarpone cream on the bottom of the cups, then add a layer of colomba and some mixed berries (raspberries, currants, blackberries, blueberries).
Continue with a second layer of mascarpone cream, then finish with more berries, shaved chocolate and smaller pieces of colomba.
Let rest in the refrigerator for at least 2 hours before serving so the dessert sets and becomes even creamier.
A simple and quick dessert, perfect to prepare even at the last minute: no baking required and the result is always creamy and indulgent.
This tiramisu with colomba and berries is the ideal idea if you’re short on time but don’t want to give up a showy dessert for Easter.
Storage and tips
Storage: keep the tiramisu in the refrigerator, covered with plastic wrap or in an airtight container, for up to 2 days. Since this is a dessert with mascarpone cream and eggs, it is important to keep it well chilled and consume it within a short time.
Tips: to prepare the mascarpone cream safely, always use very fresh eggs of excellent quality. Alternatively, if you prefer a safer option, you can pasteurize the eggs before using them.
