  • 1. Preparing the apples
    Start by washing the apples carefully and drying them well. Use a vegetable peeler to remove the skin and, with the help of an apple corer, remove the central part (the core) while keeping the apple whole. This will create the perfect space for the filling.
    2. The indulgent touch: the filling
    Place the apples on a baking sheet lined with parchment paper. Fill the central hole with the jam of your choice.
    Extra tip: I used my homemade apple mousse (click HERE for the recipe), but you can personalize them with apricot jam, berry jam or even hazelnut spread.

  • 3. Creating the puff pastry casing
    Take one roll of rectangular puff pastry and unroll it. Using a pastry cutter or a pizza cutter, cut strips about 3/8 in wide (approximately 1 cm). Take one strip at a time and wrap it around the apple, starting from the base until it is completely covered, creating a very elegant spiral effect.
    4. Baking and finishing
    Once all the apples are wrapped in pastry, brush the surface with a little milk to encourage browning.
    Temperature: Bake in a preheated conventional oven at 356°F.
    Baking time: About 20/25 minutes, monitoring the browning of the pastry.
    Chef’s trick: If you notice the base is not cooking well, switch the oven to bottom heat only for the last few minutes.

    Remove the apples from the oven and let them cool completely. Before serving, dust generously with powdered sugar and add a few fresh mint leaves for a touch of color and aroma.

    One last tip: For a more elegant end-of-meal dessert, serve the apple in pastry still warm accompanied by a scoop of vanilla ice cream or a dollop of whipped cream. The hot-cold contrast is a guaranteed success!

How to store apples in puff pastry
Apples in puff pastry are best served warm, when the pastry is at its most fragrant. However, if you have leftovers:
At room temperature: You can store them under a glass dome for about 24 hours.
In the refrigerator: If the environment is warm, it’s better to place them in an airtight container in the fridge for 2 days.
The trick to make them crispy again: Never reheat them in the microwave (they would become soggy!). Put them in a hot oven for 5 minutes at 302°F or in an air fryer: they will come back as if just baked!

Strudel Version: Before wrapping the apple, fill the central hole with a mix of jam, chopped nuts and raisins. A sprinkle of cinnamon on the pastry will make the aroma irresistible.
Indulgent Center: Replace the jam with a teaspoon of hazelnut spread or a small square of dark chocolate. Kids will love it!
Honey Crunch: Instead of brushing with milk, use melted honey and chopped almonds or hazelnuts on the surface of the pastry before baking. You will get a delicious caramelized crust.

    You can prepare the apples and wrap them in the pastry a few hours in advance, keeping them in the refrigerator covered with plastic wrap. However, I suggest baking them only at the last moment: puff pastry shows its best when it’s just out of the oven and crisp!

  • How to prevent the pastry base from staying raw or soggy?

    Apples naturally release water during baking. To prevent the base from becoming soggy, make sure the oven is very hot (356°F conventional) and, if necessary, place the baking sheet on the lowest oven rack for the last 5 minutes of cooking.

  • Can I use whole wheat or gluten-free puff pastry?

    Absolutely! The recipe remains the same. If you use gluten-free puff pastry, handle the strips a little more carefully as they tend to break more easily than traditional pastry.

  • Can I substitute the jam with something else?

    Absolutely yes. Besides my apple mousse, you can use thick pastry cream, a small piece of chocolate, or a mix of chopped dried fruit (walnuts and pine nuts) combined with a little honey and cinnamon.
