Salmon is a fish found in steaks or fillets in almost all supermarket fish departments and it is a fish with a delicate flavor that pairs well with many flavor additions and foods.

What is the juiciest part of the salmon?
If you’ve purchased the fillet or slices of fresh salmon from the fish vendor, remember that the tastiest part is the one near the central bone, as the meat is uniform and very well compact.
How to choose fresh salmon?
1) The scales are intact and shiny;
2)The salmon has a good marine smell;
3)The eyes are clear and the pupils are dark;
4)The flesh has a delicate pink color, and is firm, compact, yet tender.

Ingredients for HERB-CRUSTED ROASTED SALMON
- 2 pieces salmon (STEAKS of 7 oz each)
- 3 tablespoons breadcrumbs
- 3 tablespoons Grana Padano DOP (grated)
- 2 tablespoons extra virgin olive oil
- to taste chives
- to taste parsley
- to taste salt

PREPARATION FOR HERB-CRUSTED ROASTED SALMON
For this simple recipe with FRESH SALMON, preheat the oven to 350°F on static mode.
Chop the washed and patted dry leaves of parsley and chives with a knife or a small blender.
In a bowl, mix the breadcrumbs with the grated cheese and combine this mixture with the already chopped aromatic herbs.
Add extra virgin olive oil to this powder mixture and create an aromatic and fragrant pesto.
Wash the salmon steaks (I left the skin on) under running water and then dry them well by patting.
Line a baking sheet with parchment paper and arrange separately the 2 fresh salmon steaks.
Place the pesto on top of each steak, trying to cover them entirely.
Add a pinch of salt and bake the tray for about 20/25 minutes, being careful to ensure the salmon cooks while remaining soft, tender, and juicy.
Once cooked, serve the fish accompanied, in this case, with parsley potatoes!
