- 3 red onions
- 2 tablespoons breadcrumbs
- 2 tablespoons Grana Padano cheese, grated
- to taste basil
- to taste chopped parsley
- 1 sun-dried tomato in oil (chopped)
- 1/2 teaspoon pickled capers (I got the tiny ones called occhiello Conad)
- to taste salt
- to taste pepper
- to taste extra virgin olive oil

FOR THE PREPARATION OF THE RECIPE RED ONIONS WITH HERBS
any white or golden onion to taste and according to what we have at home!
So I peel the onions and cut them first in half and then again in half, then into wedges (today I’m a bit picky).
I preheat the oven to 375°F and put the other ingredients into a bowl, then the breadcrumbs, the grana cheese, the fresh chopped basil with parsley.
I arrange the wedges of Tropea red onions in a single layer and sprinkle them with this enriched breadcrumbs and season with salt and pepper.
I add some extra virgin olive oil and bake for about 30 minutes, remembering to add the chopped sun-dried tomatoes and the pickled capers occhielli just a few minutes before the end of cooking to prevent them from drying out too much with prolonged cooking!
After the time has passed, the onions flavored with this rich breading will be cooked but not too soft, and therefore ready to be enjoyed perhaps with some quick slices of meat or a tasty sea bass in Cervia salt!
