  • 3 red onions
  • 2 tbsp breadcrumbs
  • 2 tbsp Grana Padano, grated
  • to taste basil
  • to taste chopped parsley
  • 1 sun-dried tomato in oil (chopped)
  • 1/2 tsp capers in vinegar (I used the very small ones called 'occhiello' (Conad))
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil

FOR THE PREPARATION OF RED ONIONS WITH AROMATICS RECIPE

  • Any onion — white or yellow — is fine depending on what you have at home!

    So I peel the onions and cut them in half, then in half again, then into wedges (today I’m a little clumsy).

  • Preheat the oven to 374°F and put the other ingredients in a bowl: the breadcrumbs, the grana (grated), and the fresh basil chopped together with the parsley.

  • Arrange the Tropea red onion wedges in a single layer and sprinkle them with this enriched breadcrumb mixture, then season with salt and pepper.

    Add some extra virgin olive oil and bake for about 30 minutes, remembering to add the chopped sun-dried tomato pieces and the pickled caper buds just a few minutes before the end of cooking to prevent them from drying out too much!

  • After the time is up, the onions flavored by this rich topping will be cooked but still slightly firm and ready to be enjoyed, perhaps with some quick slices of meat or a tasty salt-baked sea bass!
