Sweet Corollo of Elba Island

I’m always curious about traditional recipes and when HERE I found the recipe for the Sweet Corollo of Elba Island I immediately thought of trying these ingredients to make this typical cake from a beautiful Italian island.

The traditional sweet corollo of Elba Island is the classic pantry cake perfect for breakfast and the aroma is delightful because a small glass of anise liqueur is also added to the batter.

The corollo is the typical cake that was and still is baked to celebrate an event and is connected to a romantic story from the village of San Piero.

There it was customary to prepare the corollo on the first Sunday of May by all the young girls to whom the “maggiolanti” had dedicated serenades, in other words the song of May. After singing to all the beloved girls, the maggiolanti would retrace their steps collecting all the corolli dedicated to them. Personally I did not use a bundt pan and I apologize if that was the only format to be used!! The Sweet Corollo of Elba Island is soft, light and very fragrant: a real treat!

Ingredients RECIPE COROLLO sweet cake of Elba Island

  • 4 cups Flour (00)
  • 10.5 tbsp Butter (room temperature)
  • 1.5 cups Sugar
  • 4 medium eggs
  • 1/4 cup Anise liqueur
  • 3/4 cup Milk
  • 1 lemon (zest)
  • 1 packet baking powder
  • Powdered sugar (optional)
  • butter and flour (for greasing)

Preparation Recipe Sweet Corollo Elba Island

  • Pour the flour into the stand mixer bowl (or into a large mixing bowl). Make a well in the center and place the eggs and the softened butter cut into pieces. Mix the ingredients to combine everything.

  • Now add the sugar, the anise liqueur and the grated lemon zest. Add the warm milk after dissolving the baking powder in it.

  • Continue mixing with the paddle attachment to obtain a homogeneous, smooth and fairly light batter. Pour the mixture into the prepared buttered and floured pan.

  • Bake at 356°F for about 45 minutes. It’s done when the skewer test is successful (the skewer comes out clean). Then let the Sweet Corollo of Elba Island cool slightly.

  • Dust the corollo with powdered sugar and bring this delicious Tuscan regional kitchen cake to the table.

Tips and notes

When I read how the corollo was prepared by making a well with the flour instead of whisking the eggs and sugar as I had thought, I was a bit puzzled and apologetic because I feared it wouldn’t be as light and soft as it should be… digging around on the web I found HERE the exact same amounts but with the method I had suggested myself… It would be nice to try the recipe again using the beaten eggs and sugar method and I will soon try to see which one makes the Sweet Corollo of Elba Island even more special!!!
