Strawberry Cloud Cake

The strawberry cloud cake is a soft pantry cake, easy to make.

A strong strawberry flavor from the purée in the batter and pieces of strawberries, delicious and simple to prepare — perfect for breakfast, snack, or as a dessert.

Ingredients

  • 2 1/4 cups strawberries
  • 3 eggs
  • 3/4 + 1 tbsp cups granulated sugar
  • 7 tbsp vegetable oil
  • 1/2 cup heavy cream (liquid)
  • 1 3/4 cups all-purpose flour
  • 1 lemon
  • 1 sachet baking powder
  • powdered sugar (for dusting)

Preparation of the strawberry cloud cake

  • Wash the lemon, grate the zest and squeeze the juice.
    Wash about 1 1/4 cups of strawberries and cut them into pieces.
    Place them in a blender, add 1 teaspoon of lemon juice and 1 tablespoon of sugar and purée everything.
    Wash the remaining strawberries and cut them into pieces.

  • In a large bowl beat the eggs with the remaining sugar until you obtain a light and fluffy mixture.
    Add the vegetable oil, the heavy cream, the strawberry purée and the grated lemon zest while continuing to mix with electric beaters.
    Fold in the sifted flour and baking powder.
    Grease and flour a 9-inch diameter cake pan and pour in the prepared batter.

  • Scatter the cake with the sliced strawberries.
    Bake at 338°F in conventional mode for forty-five minutes.
    Remove from the oven, let cool and transfer your strawberry cloud cake to a serving plate.
    Dust with powdered sugar to taste and serve.
