Ingredients

  • 1 3/4 cups carrots
  • 1 oz grated Parmesan (about 6 tbsp)
  • 1/2 cup cornmeal
  • to taste salt
  • to taste extra virgin olive oil
  • 2 eggs
  • 7 oz cooked ham
  • 2 oz spreadable cheese
  • to taste arugula (or lamb's lettuce)

How to make Carrot Flatbreads

  • Put the grated carrots in a bowl and add the eggs and the grated Parmesan.

  • Season with salt and pepper, then add the cornmeal and a drizzle of oil, then mix everything. Place a portion of the carrots and form circular discs that resemble flatbreads.

  • With the quantities I recommended, you get about four flatbreads. Bake at 356°F for about 20-25 minutes.

  • Remove from the oven and fill with spreadable cheese, cooked or raw ham, salad and tomatoes, fold and enjoy.

Storage and tips for carrot flatbreads

They can be stored in an airtight container in the refrigerator until the next day. They can be filled in countless ways: salmon and arugula, or speck and scamorza, or even a vegan version with cherry tomatoes and avocado sauce, or grilled zucchini and chickpea hummus.
