Ingredients

  • 1 1/2 cups carrots
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup cornmeal
  • to taste salt
  • to taste extra virgin olive oil
  • 2 eggs
  • 7 oz cooked ham
  • 1/4 cup spreadable cheese
  • to taste arugula (or lamb's lettuce)

How to make Carrot Flatbreads

  • Place the grated carrots in a bowl and add the eggs and grated Parmesan cheese.

  • Season with salt and pepper, then incorporate the cornmeal and a drizzle of oil, and mix everything. Form some circular discs resembling flatbreads with a portion of the carrots.

  • With the suggested amounts, about four flatbreads can be made. Bake at 350°F for about 20-25 minutes.

  • Remove from the oven and fill with spreadable cheese, cooked or raw ham, salad and tomatoes. Fold and enjoy.

Storage and tips for carrot flatbreads

It can be stored in an airtight container in the refrigerator until the next day. It can be filled with an infinite variety of options: salmon and arugula, or speck and scamorza, or even vegan with cherry tomatoes and avocado sauce, or grilled zucchini and chickpea hummus.
