The creamy homemade coconut milk (easy recipe) is completely natural and made with only two ingredients.

Very fragrant and easy to make, it is excellent both as a refreshing drink and to have in the morning for breakfast. It is natural, with no added sugars or other ingredients and is lactose-free and gluten-free.

To make it, you need a good blender or a Bimby and in just a few seconds it’s ready.

I must be honest: since I got the Bimby I have a lot of fun preparing plant-based drinks because they take me so few minutes and they are really tasty.

There are juice extractors on the market and they can be mid/high priced, but with a good blender and a cheesecloth we can achieve the same result at home.

Another advantage not to be underestimated is sustainability, because we don’t produce cardboard waste and the leftover okara (the pulp/waste) can be used in yogurts, to make simple sweets and, since there are no added sugars, you can also use it in savory preparations.

Steps

  • Heat the water in the Bimby bowl for 3 min – 176°F – speed 1. Add the coconut and let it soak for 5 minutes, then blend 1 min – speed 10.

  • Strain with the cheesecloth or a fine-mesh sieve and pour into a clean, dry glass bottle with a cap. Store in the fridge.

  • Enjoy chilled or warm.

How to make coconut milk without a Bimby

Heat the water until it is very hot but not boiling.
Put the shredded coconut in a blender.
Pour the hot water over it and let it sit for 5 minutes.
Blend for about 1 minute at maximum speed.
Strain with a fine mesh sieve, a cheesecloth or a nut milk bag.
For a creamier milk, you can reduce the water to 1 cup (about 250 ml).
