- 1 1/4 cup cooked lentils
- 1 egg
- 1/3 cup breadcrumbs
- 1 oz grated Parmesan cheese
- 1 garlic, minced

- 14 oz tomato purée (passata)
- 2 tbsp extra-virgin olive oil

Steps
Roughly blend the cooked lentils.
Transfer them to a bowl and add the egg, breadcrumbs, Parmesan, garlic, parsley, salt and pepper. Mix until you get a moldable mixture.
Scoop small portions of the mixture and shape compact balls. If the mixture is too soft, add a bit more breadcrumbs.
Lightly dust the meatballs with flour.
Heat a drizzle of olive oil in a skillet and brown the meatballs for 3–4 minutes, turning gently until golden.
Add the tomato purée to the skillet and adjust salt to taste.
Cover and cook on low heat for 15–20 minutes.
Finish with fresh basil and serve hot with toasted bread or white rice.
