VEGETABLE QUICHE-the perfect last-minute dinner

Sometimes you really don’t feel like cooking, or you have no ideas. Today it happened to me. Exhausted and no desire to cook. In the fridge, I had some vegetables desperate for a new life, so I decided to make a savory pie. I used what I had at home. You do the same. But if you want to try this recipe, you will need very few ingredients.

Ingredients

  • 1/2 white onion
  • 1 clove garlic
  • 7 oz delica pumpkin
  • 7 oz broccoli
  • 7 oz purple cabbage
  • 7 oz green cabbage
  • to taste salt
  • to taste olive oil
  • 1 pinch pepper
  • 4 eggs
  • 2 tbsps grated cheese
  • 1 sheet round puff pastry
  • 3.5 oz mozzarella for pizza

Steps

  • Sauté the garlic and chopped onion in a pan with plenty of oil for a few minutes.

  • Then add the vegetables, season with salt, and cook for about 15 minutes. The vegetables should remain crunchy.

  • In a separate dish, beat the eggs with a pinch of salt, pepper, and 2 tablespoons of grated cheese.

  • Unroll the puff pastry on the crisp plate if you bake the quiche in the microwave, or in a baking tray if you bake it in the oven.

  • Pour in the vegetables, the beaten eggs, and the mozzarella. Cook for 15 minutes in crisp mode in the microwave. Or about 30 minutes at 390°F in the oven.

  • Good both hot and cold.
