Balsamic-Glazed Carrots

The balsamic-glazed carrots are not made with just any balsamic — here we use Lacrime di Cipolla Gusto Toscano, a gourmet condiment that gives this very simple side dish a unique flavor. Super quick to make, the balsamic-glazed carrots are cooked in the microwave in just a few minutes and they taste amazing. Don’t have a microwave? You can also bake these balsamic-glazed carrots in the oven!

Ingredients

  • 1.1 lb carrots
  • 2 cloves garlic
  • 2 tbsp extra virgin olive oil
  • 2 tbsp acacia honey
  • to taste salt
  • 1 orange (zest)
  • 1 lemon (zest)
  • 2 tbsp Lacrime di Cipolla Gusto Toscano
  • 4 sprigs lemon thyme

  • 1 Knife
  • 1 Vegetable peeler
  • 1 Baking dish microwave-safe
  • 1 Microwave oven

Steps

  • Peel the carrots, trim the ends and slice them on the diagonal. Place them in a bowl and dress with the oil, salt, honey, Lacrime di Cipolla (or a good balsamic vinegar), and the grated orange and lemon zest. Mix well to evenly coat the carrots and transfer them to a microwave-safe baking dish. Add the garlic and the lemon thyme. Cover with microwave-safe plastic wrap and cook at 750W for 12 minutes. If your microwave does not have 750W you can cook at 800W. If you prefer to bake in the oven, preheat to 392 °F, cover with foil and bake for about 20 minutes.
