The Chantininho cream for decorating is a cream made with whipped cream, powdered milk and royal icing, perfect for filling, covering and decorating important cakes. I found the recipe HERE and it is a delicate-flavored version that I like a lot. I read several recipes on foreign blogs as well, some of which use condensed milk instead of royal icing, but I think that can be excessively sweet. This variant, which I would call more “Italianized”, is my favorite; I liked it both for how it behaves in decorations and for the decidedly less sweet taste. And look at this Chantininho cream in the little glass. Do you see how firm it is? Exactly. The decorations will be beautiful, perfect, and will stay exactly where you pipe them. Oh! Ingredients

The ingredients are sufficient to cover and decorate a three-tier rectangular cake measuring 20x30x10 centimeters (about 8 x 12 x 4 inches).

  • 2 cups sweetened vegetable whipping cream (for whipping)

  • 0.88 oz royal icing mix
  • 1 cup sweetened vegetable whipping cream (for whipping)
  • 1.06 oz whole milk powder
  • 0.44 oz royal icing mix
  • as needed gel food coloring

Steps


  • Prepare the chantininho for filling: in the stand mixer bowl place all the ingredients and whip them until firm peaks form.

Leave one portion plain and add gel coloring to the other a few drops at a time so you can adjust the intensity of the color to your liking.

    Use the white chantininho reserved for filling to completely cover the cake. Use the chantininho for decorations to create cream roses and small rosettes with a piping bag and the 1M tip.
